ABOUT ARDAGH CASTLE |
Ardagh Castle is a working small-holding in the South West of County Cork, Eire. The main area of production is Goats milk cheese. Among the many residents are goats, chickens producing free-range eggs, two dogs and four cats. The O'Flynns were anciently chiefs of the Barony of Ibawn in the south of County Cork, and the chief of the family resided at Ardagh Castle on top of the hill, (now a ruin). |
Ardagh Castle is a traditional Cork farmhouse with outbuildings which was in a state of extreme disrepair when purchased by the present owner. It was then sympathetically renovated while still preserving all of it's original character. It is now run as a small-holding by the owner who originally came from a rural background in Devon, England. There are approximately 8 milking goats on the small-holding, and most of the milk from them is used to make cheese. The remaining whey is sometimes used to make a Norwegian cheese called Gjetost and also Ricotta. The goats are kept free-range on land that does not have any chemicals applied to it, and their food does not contain hormones. The farming method is based on organic principals. The picture on the left is of the owner of the property with Ashley the cat and Tess the dog. Tess is a Rhodesian Ridgeback/Old English Sheep Dog/Black Labrador. The round courgettes were grown in the garden by the owner. There are four other cats and another dog called Tadgh.
