ARDAGH CASTLE CHEESE
 



Ardagh Castle Goats Cheese is made on the farm using unpasteurised goats milk and a non-GM rennet. The cheese is pressed and matured for a minimum of 8 weeks, giving a Wensleydale type cheese, slightly crumbly with a pleasant, nutty after-taste.

The cheese is available at Skibbereen Farmers' Market (Saturdays). Also Skibbereen Country Market (Fridays), Clonakilty Farmers' Market (Thursdays), and also at the farmhouse by appointment. It can also be found on the cheese boards of local restaurants and this year has been recommended in the Bridgestone Irish Food Guide.


Cheese Label
There are three types of cheese made at Ardagh. The first is the Wensleydale-style cheese, as already mentioned above. The second is goats milk Ricotta, and the third is a Norwegian recipe called Gjetost which is made with whey and has a fudge-like texture.
